At Domaine de Perches, the table d’h\u00f4tes comes to life in the morning with breakfast. It stretches in the evening during a dinner served in one of the dining rooms of the house or on one of the sheltered terraces outside. The meals, carefully prepared, engage all the senses:<\/strong> flavors of the dishes, colors of fruits and vegetables, the song of sparkling wines, scents of spices, and the touch of various breads.<\/p>\n

Domaine de Perches When we decided to settle in the Southwest, we discovered a territory rich in market garden products and processed goods. Tarn is generous and blends tradition with local craftsmanship. We enjoy the weekly market in Gaillac with local producers all year round and the organic market every Tuesday evening, Noctambio.<\/p>\n

For the dinners at our guesthouse, we take you on a journey of flavors and aromas, combining different fresh and local products. Thus, you will discover the pink garlic of Lautrec (mild and to be consumed raw or cooked), the typical squash of Tarn long before the return of ancient vegetables to market stalls, the responchons (pronounced respounchous), asparagus from the Cordes-sur-Ciel region, or elderberry, to be enjoyed in jams, jellies, or syrup. Cow, goat (cab\u00e9cous), or sheep cheeses (le secret du berger) are subtly combined with vegetables or fruits on a starter plate or presented during the aperitif.<\/p>\n

Breakfasts also offer an assortment of fresh products, homemade or from local agriculture:<\/strong> yogurts, jams, cheeses, bread, croissants, and seasonal fruits.<\/p>\n

ORGANIC GAILLAC WINES FOR OUR TABLES<\/h2><\/div>

The rows of vines shape the landscape of Tarn, especially in Gaillac. The vineyards are numerous and among the oldest in France. Gaillac wine is less commonly served in France than abroad. However, it has undergone an evolution over the past thirty years with the installation of young winemakers. Sensitive to new organic production methods, they have contributed to the rapid growth of organic wines.

Carefully selected, the best organic wines from Gaillac and the Southwest accompany each dish of our dinners. On the table, you’ll find a palette of colors (white, ros\u00e9, vermilion red, garnet…). The red grape varieties take us on a journey through the house with the names given to our guest rooms: Braucol, Duras, or Sirrah. For the aperitif, the ancestral method offers festive bubbles, and the sparkling white provides a particularly refreshing taste, especially in summer.<\/p>\n
